TOASTED COCONUT PIE 
3 beaten eggs
1 1/2 c. sugar
4 tsp. lemon juice
1/2 c. melted butter
1 tsp. vanilla
1 c. coconut
1 unbaked 9 inch pie shell

Thoroughly combine eggs, sugar, butter, lemon juice and vanilla. Stir in coconut. Pour into pie shell. Bake at 350 degrees for 40-50 minutes. Cover top of pie loosely with foil for 20 minutes then remove from 20 minutes while baking. Cool before serving.
