1/2 c. sugar
1 c. butter
1 egg
1 c. coconut
1/2 tsp. baking soda
1 tsp. cream of tartar
1/4 tsp. salt
2 c. flour

Toast the coconut in the oven until lightly brown. Cream sugar and butter. Add egg and beat until fluffy. Sift together dry ingredients and add to the sugar mixture. Mix well and add the coconut. Roll into balls and flatten with fork. Bake at 350 degrees until lightly brown.
