PASSOVER NUT CAKE 
8 eggs, separated
1 c. sugar
3/4 c. potato starch
Pinch of salt
2 tbsp. cocoa
1 lemon grated with rind
1 c. ground walnuts or almonds

Beat egg whites. When it peaks, slowly add 1/2 cup sugar while beating. Add salt. Set aside. Beat egg yolks with 1/2 cup sugar, cocoa, potato starch, lemon and nuts. Fold in egg white mixture. Bake at 325 degrees for 25 minutes. Test with toothpick.
