PASSOVER (OR ANYTIME) NUT CAKE 
6 eggs, separated
1 c. sugar
6 tbsp. matzo meal
1 tsp. ground coffee
1 c. ground walnuts
1 tbsp. lemon juice

Beat egg yolks and sugar well. Add matzo meal, nuts and lemon juice. Beat egg whites until stiff and fold into batter gently. Bake in greased 9 inch spring form pan at 350 degrees for 55 minutes, until cake is dry.
