ITALIAN STIR-FRIED CHICKEN 
3 tbsp. olive oil
1 garlic clove, crushed
2 whole lg. chicken breasts, deboned, skinned and cut into 1-inch pieces
1 c. fresh or frozen thawed Italian green beans
1/2 c. chopped red bell pepper
1/4 c. chopped green onion (white part only)
4 med. tomatoes, quartered
1/2 tsp. salt
2 tbsp. diced pimento
1 tbsp. capers, rinsed and drained
1-2 tbsp. fresh lemon juice
1 tsp. red pepper (to taste)

Place wok or large skillet over high heat until very hot, about 30 seconds. Add oil and garlic and stir-fry 10 seconds. Add chicken, beans, red bell pepper, onion and salt and continue stirring until chicken is cooked through, about 3 minutes. Add tomatoes, pimento, and capers and stir-fry 1 minute. Sprinkle with lemon juice and toss through. Turn onto heated platter, sprinkle with ground pepper and serve.
