EASY CHEWY PEANUT BUTTER CRANBERRY COOKIES | |
1 cup peanut butter 1 cup sugar 2 extra large or jumbo eggs 3 tablespoons self-rising flour 1/4 to 3/4 cup dried cranberries 1 teaspoon vanilla, if desired Preheat Oven to 350°F. Grease one cookie sheet or grease two round cake pans. (Any regular cake size pans will do.) In a large mixing bowl, using a large spoon to mix together, combine eggs, peanut butter, sugar and vanilla (if desired). After these items are well mixed, then add 3 tablespoons of self-rising flour mixing it in well, then add your cranberries, you can add them all or keep some back from the mix to put on top. To make giant chewy cookies, divide dough in half, roll into ball, then push down on dough to about 12 inch thick. Bake for 15 minutes at 350°F. To make individual cookies, take dough and measure 2 nearest to level tablespoons of it, roll it into balls, then bake for 15 minutes. Note: Different ovens vary in temperature, so it it very important to watch these to be sure cookies don't overcook and lose their chewy texture. Submitted by: Christine Hagar |
