ZUCCHINI CASSEROLE 
2 1/2 c. zucchini or summer squash (or mix half & half), cut in chunks
4 eggs
1/2 c. Parmesan cheese
1/2 c. Bisquick
1/2 tsp. baking powder

Mix eggs and cheese. Add the Bisquick, baking powder and squash. Put into buttered baking dish. Bake at 350 degrees for 30 to 35 minutes.

NOTE: If you double recipe, use 6 eggs.
