CARROT CAKE | |
2 c. sugar 1 1/2 c. Wesson oil 4 eggs 2 c. sifted flour 1 1/2 tsp. baking soda 2 tsp. cinnamon 2 c. grated carrots, fine 1 c. peanuts, chopped very fine in blender Combine as listed. Bake at 350 degrees for 25 minutes in greased and floured pans. Use 3 (9 inch) pans. CREAM CHEESE ICING: 1 (8 oz.) pkg. cream cheese 1 stick butter 1 box powdered sugar 1 tsp. vanilla 1/2 c. peanuts, chopped fine in blender Soften cream cheese. Mix all ingredients together in mixer. Mix until smooth. If too thick, add a small amount of milk. |
