LEMON CHICKEN | |
1/3 c. lemon juice 1/4 c. reduced-sodium soy sauce 1 clove garlic, minced 1/2 tsp. salt 1/2 tsp. ground ginger 1/4 tsp. pepper 2 lbs. skinned, boned chicken breast halves Vegetable cooking spray Combine first 6 ingredients in a shallow container, stirring until well combined. Add chicken; cover and marinate in refrigerator 2 to 3 hours, turning once. Drain and discard marinade. Transfer chicken to rack of a shallow roasting pan coated with cooking spray. Bake at 325 degrees for 1 hour or until chicken is done. Cut into 2 ounce slices. Yield: 16 servings. Each Serving Amount: 1 slice. Exchanges: 2 lean meat. Cholesterol: 37 milligrams. Calories: 75.
