LEMON SHOYU CHICKEN 
2 lb. boned chicken, cut in bite-size pieces
1/4 c. salad oil
1/4 c. low salt soy sauce
1 clove garlic, crushed
1/2 tsp. salt
1/3 c. lemon juice
2 tbsp. sugar
1/2 tsp. grated ginger
1/4 tsp. pepper

Thread chicken on skewers. Combine marinade ingredients. Marinate chicken 1-2 hours. Broil 3-5 minutes or until done.

Makes 18 kabobs.

Beautiful recipe.
Just a note. If you used two skewers on each kabob, the meat won't rotate when you turn it. Also, I sort the vegetables after the marinade a put each type on separate skewers. That way, I can cook them in order on how long it takes to cook. No tomato falling off the skewer next to a hard potato.
