BEST TASTING GUACAMOLE 
Its GREAT with homemade fried fish sandwiches!!

4 ripe avocados
1 large tomato
1/4 cup finely chopped fresh cilantro
1 small red onion
salt and pepper, to taste
1 lemon, half squeezed over all ingredients

Take four ripe avocados and remove skin and dice into medium size pieces, add to mixing bowl. Cut large tomato into smaller pieces and try to remove as many seeds as possible (they make dip too wet), and add to bowl.

Cut fresh cilantro into very small, fine pieces and add to other ingredients. Chop small red onion in half and dice into small pieces, add half and work your way up to 3/4 - add as much as the whole onion and as little as half, depending on how small the onion actually is. Sprinkle salt and pepper to taste. Finally cut your lemon in half and squeeze over mixing bowl.

Using a wooden spoon (they work the best) stir the ingredients until the avocado gets really soft and it all looks like a delicious dip.

Tip: Save the other half of your lemon for later, when avocado is left out it gets brown (its just free radicals), squeeze a little more lemon and stir - the brown will disappear.

Serve with tortillas or anything else you want it on. Enjoy!
