PINEAPPLE ZUCCHINI CAKE 
3 eggs
2 c. sugar
1 c. oil
3 tbsp. vanilla
2 c. peeled, well grated & drained zucchini
2 c. flour
1 c. (8 oz.) crushed pineapple, undrained
1 c. walnuts, chopped
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt

Preheat oven to 350 degrees. Grease and flour pan. Beat eggs until fluffy. Add sugar, oil, and vanilla and blend well. Add zucchini. Sift together flour, baking powder and baking soda and salt, then add to batter. Stir in pineapple and nuts. Mix well. Turn into pan and bake until toothpick inserted in center comes out clean, about 1 hour. Cool before removing from pan.
