AUNT LU'S SCONES OF SCOTLAND 
2 3/4 c. flour (stir first)
2 1/2 tsp. baking powder
1/4 c. sugar
2 tbsp. shortening
1 egg, slightly beaten in 1 c. measure
Milk to make 1 c. with egg

Sift or stir dry ingredients; cut in shortening until fine. Beat egg slightly and add milk to make 1 cup. Add to dry ingredients and mix until moist.

Flour board well and knead until elastic - 3 minutes (your kids love to do this part, "pat it and push it"). Divide dough in half; shape into 2 circles 9 inches or so in diameter.

Cut into 8ths and bake on hot griddle, ungreased and covered, at 350 degrees in electric frypan. Bake 7 minutes on first side, 5 minutes on second side. Enjoy hot with jams and jellies.
