ORANGE DELIGHT SALAD 
1 (6 oz.) pkg. orange Jello
1 (8 oz.) can mandarin oranges
1 (15 oz.) can crushed pineapple
1 (8 oz.) Cool Whip
1 pt. low-fat cottage cheese

Night before:

1. Remove mandarin oranges and crushed pineapple from cans, place in food drainer (inside a larger bowl or on a plate to catch drained juice), and store covered in refrigerator overnight to drain.

2. Remove Cool Whip from freezer and store in refrigerator overnight to defrost.

At least two hours before serving:

1. In a medium size mixing or serving bowl, mix dry Jello (i.e. directly from box) with cottage cheese and let stand for 5-10 minutes. Stir 3-5 times to mix well and dissolve Jello

2. Add mandarin oranges, crushed pineapple and Cool Whip. Mix well.
