AGLIO E OLIO SAUCE (GARLIC AND
OIL)
 
1 c. Italian olive oil
8 cloves garlic, peeled and thinly sliced
1 c. water
1 1/2 tsp. finely chopped, fresh parsley
1/2 tsp. oregano
1/2 tsp. freshly grated pepper, black
1 tsp. salt

In a saucepan, sauté the garlic in oil over medium heat, until garlic is golden brown.

Remove pan from heat. Gradually stir in a thin stream of water (do not add water all at once).

Return to heat and simmer for 5 minutes, stirring occasionally. Add parsley and seasonings; simmer, uncovered, for another 10 minutes.

Combine thoroughly with pasta before serving.

This is just the way my nonna taught me how to make this and I've been making this ever since. Maybe a little less oregano, and sometimes a little parmesan.
