APPLE PANCAKES WITH CIDER SYRUP 
2 c. baking mix
1/2 tsp. cinnamon
1 egg
1 1/3 c. milk
3/4 c. grated apples

Beat baking mix, cinnamon, egg, and milk until smooth. Fold in apple. Pour from 1/4 cup measuring cup onto hot griddle. Bake until bubbles appear.

CIDER SYRUP:

1 c. sugar
2 tbsp. cornstarch
1/2 tsp. pumpkin pie spice
2 c. apple cider
2 tbsp. lemon juice
1/4 c. butter

Mix sugar, cornstarch, and spice in saucepan. Stir in cider and lemon juice. Cook, stirring constantly, until mixture thickens and boils 1 minute. Remove from heat and stir in butter.

Apple juice may be substituted for cider.
