SHOOFLY PIE 
BOTTOM LAYER:

1 lg. egg
1 c. molasses
1 c. packed brown sugar
1/2 tsp. baking sod
1/3 c. boiling water
2/3 c. cold water
1 (9 inch) unbaked pie shell

TOP LAYER:

2 c. flour
2/3 c. packed brown sugar
1/3 tsp. baking powder
1/2 c. shortening

Heat oven to 350 degrees. Stir egg and molasses into 1 cup brown sugar. Dissolve soda in boiling water. Add cold water, then stir into egg mixture. Pour into pie shell. Mix flour, 2/3 cup brown sugar and baking powder.

Add shortening and cut in with pastry blender or 2 knives until mixture resembles coarse crumbs. Sprinkle over the bottom layer. Bake 10 minutes. Reduce heat to 325 degrees and bake 50 minutes longer or until firm.

Serves 8.
