ZUCCHINI CASSEROLE 
4 c. zucchini, peeled and cubed
2 eggs
1 c. mayonnaise
1 sm. onion, finely chopped
1 c. cheese, grated
Pepper to taste

TOPPING:

1 tsp. butter
2 tsp. bread crumbs

Pre-cook and drain zucchini (not mushy). Grease 1 1/2 quart casserole. Mix all in a mixing bowl except the topping. Turn into the casserole dish. Melt butter and add to bread crumbs. Sprinkle on top of casserole. Cook uncovered for 25-30 minutes at 350 degrees.
