YORKSHIRE PUDDING 
2 eggs
1 c. milk
1 c. sifted all-purpose flour
1/2 tsp. salt
1/2 tsp. pepper
Beef drippings from roast

Using blender, beat eggs until light and then beat in milk and flour. Add salt and pepper and 2 tablespoons beef drippings. Heat flat pan (11 x 14 x 2 1/2 inch) and pour in a heavy layer of hot drippings.

Pour batter in drippings and bake at 450 degrees about 10 minutes. Reduce heat to 375 degrees and continue baking 15-20 minutes more or until brown and puffy. DO NOT open oven door during first 20 minutes of baking.
