ZUCCHINI BREAD 
3 eggs, beaten until foamy
1 1/2 c. sugar
1 c. salad oil
3 c. flour, unsifted
2 tbsp. cinnamon
1 tsp. baking soda
1/4 tsp. baking powder
1 tsp. salt (optional)
2 c. zucchini, grated
1 c. chopped walnuts and/or chocolate chips

Combine the beaten eggs, sugar and salad oil. Gradually add the flour, cinnamon, baking soda, baking powder and salt (stirred together). Then fold in the grated zucchini and lastly, the walnuts and/or chocolate chips. Bake at 350 degrees for approximately 1 hour (the sides should come loose from the pan.

DO NOT USE A MIXER. THE INGREDIENTS MUST BE STIRRED BY HAND. (You may use a bundt pan for a cake or a loaf pan or make cupcakes; just adjust the baking time.)
