ZUCCHINI BREAD 
3 eggs
1 c. oil
2 c. sugar
1 tsp. vanilla
2 c. raw zucchini, peeled and grated
3 c. plain flour
1 tsp. salt
1 tsp. baking soda
3 1/2 tsp. cinnamon
1/4 tsp. baking powder
1/2 c. nuts, chopped (optional)
Sm. can crushed pineapple (optional)
6 oz. chocolate chips (optional)

Beat eggs until foamy. Add oil, sugar. Mix well. Stir in grated zucchini. Sift flour with salt, soda, cinnamon and baking powder. Add to egg mixture and blend well. Fold in nuts, pineapple and chocolate chips. Pour into 2 greased 9 x 5 x 3 inch loaf pans. Bake for 1 hour at 300 degrees.
