ZUCCHINI CASSEROLE 
4 zucchini squash
1 (16 oz.) can tomatoes, drained
1 med. onion, sliced
Grated Cheddar cheese
Croutons
Salt & pepper

Peel squash and slice into rounds. Layer zucchini, onions and then tomatoes. Salt and pepper to taste. Top with grated cheese and croutons. Bake at 400 degrees for 40 minutes. (For best results use long casserole dish.)
