ZUCCHINI BREAD 
3 eggs
1 3/4 c. sugar
3 c. flour
1 tsp. salt
1 c. salad oil
3 tsp. vanilla
1/2 tsp. baking powder
2 c. ground unpeeled zucchini
2 tsp. cinnamon
2 tbsp. grated orange peel
1/2 c. chopped raisins or nuts
1 tsp. baking soda

Beat eggs until light and fluffy. Add sugar and beat well. Stir in oil, vanilla, zucchini, and orange peel. Add dry ingredients. Stir in. Add raisins or nuts, if desired. Turn into 2 greased 9 x 4 inch loaf pans.

Bake at 325 degrees for 50-60 minutes or until breads tests done. Remove and cool.
