ZUCCHINI BREAD 
3 eggs
2 c sugar
1 c. vegetable oil
1/2 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. vanilla
1 tsp. nutmeg
1/8 tsp. ground cloves
3 c. flour, sifted
2 c. zucchini, unpared and shredded
1 c. walnuts, chopped
Zest of one orange, grated
1/4 c. milk

Preheat oven to 350 degrees. In a large mixing bowl mix first 10 ingredients at medium speed for 1-2 minutes. Gradually blend in flour. Add zucchini, walnuts, grated zest of orange, and milk. Mix until just incorporated. Pour mixture into 2 greased and floured 9 x 3 1/2 x 2 inch pans or 1 greased and floured 10 inch Bundt pan. Bake at 350 degrees (45 minutes for loaf) or (1 hour and 15 minutes for Bundt).
