CHEESE GRITS 
5 c. water
1 1/2 tsp. salt
1 c. regular grits (not instant)
1/2 lb. grated sharp cheese
2 eggs, beaten
1 tbsp. butter

Preheat oven to 350°F. Bring water to boil in medium saucepan. Add salt and grits; return to boil. Reduce to slow boil and cook for 20 minutes. Set aside 2/3 cup cheese. Add rest of cheese, butter and eggs to the cooked grits and mix well. Pour into buttered casserole dish and top with the remaining 2/3 cup cheese.

Bake 30 minutes.
