CHEESE POTATO CASSEROLE 
2 lbs. frozen hash browns, thawed
1 can cream of chicken soup
1/2 stick butter, melted
1 sm. onion, diced (optional)
1 (16 oz.) container sour cream
1 tsp. salt
1/8 tsp. pepper
1 (8 oz.) pkg. grated Cheddar cheese

Mix together all ingredients, place in casserole dish. Bake, uncovered at 350 degrees for 1 hour or until done.
