CHEESE AND POTATO CASSEROLE 
2 lbs. slightly thawed frozen hash brown potatoes
2 cans Cheddar soup
1 (13 oz.) can evaporated skim milk, undiluted
1 (3 oz.) can fried onion rings (reserve a few for garnish)
Salt and pepper

Combine all the above ingredients and pour into greased crock pot. Cook on low for 7-9 hours. Can also cook on high for about 3 hours. Sprinkle with reserved onion rings before serving.
