POTATO CHEESE CASSEROLE 
2 (12 oz.) pkgs. frozen hash brown potatoes
1/2 c. chopped onions
1 can cream of chicken soup
2 c. shredded cheese
1/4 c. melted butter
1 pt. sour cream

Salt and pepper to taste. Thaw potatoes. Mix all ingredients. Melt 1/4 cup butter, add 1 cup crushed Ritz crackers and brown. Put this topping over casserole. Bake at 350 degrees for 45 minutes.
