MICROWAVE ZUCCHINI BAKE | |
1 1/2 lbs. zucchini, cut into 1/2 inch cubes 3 tbsp. butter 4 eggs, beaten 1 c. grated sharp Cheddar cheese 1 can French fried onion rings In a 2 quart glass casserole, combine zucchini and butter. Cover and cook for 5 minutes on high power. Combine eggs and cheese and stir into zucchini. Cook covered on simmer-defrost power for 10 minutes (rotate after 5 minutes). Top zucchini with onion rings and cook uncovered on simmer-defrost power for 2 minutes. Serve hot! |
