ZUCCHINI CASSEROLE 
3 eggs
1/4 c. oil
1 c. creamed corn
1 c. grated cheddar cheese
1/2 green pepper, diced
1/4 c. diced onion
Salt & pepper to taste
1 clove garlic, diced
3 lbs. zucchini, unpeeled, thinly sliced
Buttered bread crumbs (opt.)

Mix eggs and oil, beat. Pour into greased casserole. Add corn, cheese, pepper, onion, garlic, salt and pepper. Add zucchini and top with crumbs. Cover. Bake at 325 degrees for 1 hour or until tender.
