CHICKEN CHOW MEIN | |
1 1/4 lb. boneless and skinless chicken 1 1/2 c. chopped onion 3 c. diced celery 1 can Chinese vegetables and bean sprouts 1 can mushrooms (optional) 1/2 tbsp. salt 1/4 tsp. pepper 1 3/4 c. chicken broth or water Brown meat, sliced in strips, and onion in oil. Cook for about 5 minutes. Add celery, salt, pepper and hot water or broth. Cover and cook 10 minutes. Add mixed Chinese vegetables, bean sprouts, and mushrooms. Mix thoroughly and heat to boiling point. Combine thickened and flavoring ingredients; add to meat mixture. Stir lightly and cook 2 minutes. Serve with rice or chow mein noodles. THICKENING AND FLAVORING: 1 tbsp. cold water 1 tbsp. cornstarch 1 tsp. soy sauce 1/2 tsp. sugar 1/2 tbsp. Chinese brown gravy Serves 4-6. |
