CHICKEN CHOW MEIN 
Vegetable cooking spray
1 1/2 c. chopped onion
1 c. sliced celery
1/2 c. chopped green pepper
2 c. chopped, cooked chicken
1 (14 oz.) can Chinese style vegetables, drained
1 (4 oz.) can sliced mushrooms, drained
1/4 tsp. ground cumin
1 tbsp. chicken flavored bouillon granules
1 tbsp. cornstarch
3 c. water

Developed for diabetics or if on low-fat, low-cholesterol diet or if you just like to eat health.

Coat skillet with cooking spray, place over medium heat until hot. Add onion, celery and green pepper; cook, stirring constantly, 3 minutes or until tender. Stir in chicken, Chinese vegetables, mushrooms and cumin; cook over medium heat 1 minute.

Dissolve bouillon and cornstarch in water. Add to chicken and vegetables; cook over medium heat, stirring constantly, until thick and bubbly. Serve over chow mein noodles or hot cooked rice.

Serving amount 1 cup. Exchanges 1 lean meat and 1 vegetable. Cholesterol 19 mg. Calories 70. Carbohydrates 5 gm. Protein 9 gm. Fat 1 gm. Fiber 1 gm. Sodium 62 mg.
