CHICKEN LIVER LOG 
1 lb. chicken livers
4 med. onions, chopped
4 hard boiled eggs
1/4 c. melted butter
1 1/2 tsp. salt
1/2 tsp. pepper
2 tbsp. lemon juice
Chopped parsley to roll

Cook livers in small amount of water until tender, around 20 minutes. Drain. Blend or process livers, onions and eggs until smooth. Mix other ingredients in until blended. Shape into log and roll in chopped parsley. Wrap in plastic wrap and chill until ready to serve.

Serve with whole grain crackers and breads.
