CHICKEN SALAD LOG 
1 pkg. cream cheese, softened
1/4 c. mayonnaise or salad dressing
2 tbsp. lemon juice
1/2 tsp. salt
1/4 tsp. ground ginger
1/8 tsp. pepper
4 drops red pepper sauce
2 c. cooked chicken, finely cut up
2 hard cooked eggs, chopped
1/4 c. sliced green onion (2-3)
3 green bell pepper rings
1 tbsp. toasted sesame seed
3 tbsp. chopped green onion or green pepper
3 tbsp. pitted ripe olives, chopped
3 tbsp. drained pimento, chopped

Mix cream cheese, mayonnaise, lemon juice, salt, ginger, pepper and pepper sauce. Stir in chicken, eggs and 1/4 cup green onions. Shape into log, 8 x 2 inches. Wrap and refrigerate until firm, about 4 hours.

Cut bell peppers rings into strips. Place strips diagonally across log, dividing log into 4 sections. Sprinkle sesame seed on one section. Repeat with 3 tablespoons onion, 3 tablespoons olives, 3 tablespoons pimento on remaining sections. Serve with assorted crackers. Makes about 4 cups.
