ZUCCHINI PIE 
1 3/4 c. cooked zucchini
3/4 c. sugar
1/2 tsp. salt
1 1/2 tsp. PP spice
2 eggs, beaten
1 c. evaporated milk
1/2 c. water
9 inch pie shell

Mix zucchini, sugar, salt, and spice. Add egg, milk, and water. Beat until smooth. Pour into pie shell and bake at 450 degrees for 15 minutes, then turn oven to 300 degrees and bake for 45 minutes longer or until done. Pie is done when knife inserted in center of pie comes out clean.
