ZUCCHINI APPLE PIE 
6 c. zucchini
1 c. sugar
5 tbsp. lemon juice
1 tsp. cinnamon
1/4 tsp. cream of tartar
1/4 c. flour
Your favorite pie crust

Peel, seed, and slice zucchini. Boil until just tender. Drain well. Add sugar, juice, cinnamon, cream of tartar, and flour. Make 2 crust pie. Bake at 375 degrees for 40 minutes.
