LEMON CHEESE FILLING 
4 lemons (juice of) rind of two
2 c. sugar
4 tbsp. cake batter
4 eggs
1/2 stick butter

Cream cake batter, sugar and eggs. Add butter, lemon juice and grated lemon rind. Cook in double boiler for 1 hour or microwave on high for 20 minutes. Stir often. Spread on cake layers. This is a never fail lemon cheese filling and is delicious.

Since microwave ovens vary in power, you may need to adjust your cooking time.
