LEMON BUTTER FILLING | |
1/4 c. flour 7 egg yolks 2 c. sugar 1/4 c. lemon juice Grated rind of 2 lemons 1 c. butter Beat egg yolks thoroughly. Mix sugar and flour and add egg yolks. Add lemon juice, rind and butter. Cook in top of double boiler letting the water simmer but not boil. Stir constantly. Cook until mixture is thick enough to hold its shape in a spoon. Remove from heat. Beat until cool and a good spreading consistency. |
