LEMON BUTTER 
3 lemons
6 eggs
1/2 c. butter
2 c. sugar

Roll lemons and grate rind fine. Beat eggs, stir in juice of lemons and rind. Add butter and sugar, stirring all vigorously. Let boil until thick as honey, stirring all the time.

Lemon butter is great for picnics. It seems only to be in Burlington County and Quaker families.
