LEMON BUTTER 
3 eggs
1 c. sugar
1 tbsp. butter
2 lemons (grated rind and juice), roll lemon to get more juice

Beat eggs and sugar together until thick and very light in color. Add lemon juice, rind and butter. Cook in top of double boiler over hot water. Stir constantly until mixture resembles mayonnaise. Yields 2 cups of butter.
