“SATURDAY NIGHT MEATLOAF” IS IN:

SATURDAY NIGHT MEATLOAF 
1 egg
1 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder
2 tablespoons parsley flakes
1 large onion, chopped
1 green pepper, chopped
3/4 cup bread crumbs
2/3 cup (8 oz. can) pork and beans, drained
1 lb. ground beef
1 small onion (for garnish)

Mix together all ingredients except ground beef. Add mixture to ground beef and mix well. Shape into an round-oval loaf and place in center of baking pan.

GLAZE:

Combine liquid from pork and beans, 1/2 cup ketchup and two tablespoons of brown sugar. Cut a small onion into thin circles and arrange over the top of the meat loaf. Pour glaze over onions and meat so there is a thin layer over entire loaf.

Bake in preheated 375°F oven for 35 to 45 minutes.

Variation: Eliminate salt: use 1 1/2 teaspoons taco seasoning instead. Eliminate beans; Use refried beans instead.
