BASIL ZUCCHINI 
4-5 slender zucchini, sliced in 1/4 inch slices
2 tsp. butter
Garlic
Black pepper
Basil
1/2 c. chopped onion
1/4 c. chicken broth
1/4 c. Italian bread crumbs

Over medium heat, melt butter; add sliced zucchini and garlic, pepper, onion, broth, and basil. Cook until tender. Remove to serving dish. Top with bread crumbs. Cover until serving time.

Great compliment to Chicken Scallopini.
