BATTER DIPPED ZUCCHINI 
2 c. 1/2-inch slices zucchini
1 c. flour
Dash of pepper
6 oz. beer or ginger ale
2 stiffly beaten egg whites
2 drops of yellow food coloring
1/2 tsp. salt
2 egg yolks, beaten
2 tbsp. melted butter

Dry squash on paper toweling for 30 minutes. Combine flour, salt, pepper, egg yolks, food coloring and beer or ginger ale. Stir thoroughly. Add butter. Let mixture rest for 1 hour at room temperature. Fold in beaten egg whites. Dip zucchini slices in batter. Fry at 360 degrees until uniformly browned. Serves 4.
