CHEESE-RICE LOAF 
2 c. cooked brown rice
1 sm. onion, minced
2 c. shredded Cheddar cheese
4 tbsp. butter or unsalted butter, melted
2 whole eggs, lightly beaten
1 c. milk, whole or skim

Grease a loaf pan lightly (even with greasing, it does stick a bit to the pan).

Combine cooked rice, onion and cheese. Mix well. Add the melted butter, and mix. Mix in the eggs and milk thoroughly. Pour into pan and bake in a preheated 350 degree oven for about 1 hour, until browned lightly and set (a knife should come out clean when inserted into the middle of loaf).

Cut into thick slices with a sharp knife. Serves between 4 and 6 people.
