LEMON BAKED CHICKEN 
2 broiler fryers (cut up)
1/4 c. lemon juice
1/4 c. salad oil
1/4 tsp. garlic powder
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. thyme
1 c. flour
Grated rind of 1 lemon
1 1/2 tsp. paprika
1/2 c. salad oil

Wash chicken and pat dry. Place chicken in shallow dish. Pour combined lemon juice, salad oil, salt and pepper, garlic powder, and thyme over chicken. Let marinade in refrigerator for 2 hours or more.

Remove chicken from marinade and drain. Roll chicken in combined flour, lemon rind and paprika. In a large skillet, heat the half cup of oil. Add chicken a few pieces at a time and brown well on each side. Place browned chicken in a single layer in a shallow roasting pan. Bake uncovered in a moderate oven until cooked 45 to 50 minutes.
