RED VELVET CAKE 
1/2 c. shortening
1 1/2 c. sugar
2 eggs
2 c. flour
1 tbsp. cocoa
1/2 tsp. salt
1 c. buttermilk
2 oz. red food coloring
1 tbsp. vanilla
1 tsp. baking soda
1 tbsp. vinegar

Cream together the shortening and sugar. Add eggs, sift the dry ingredients together 3 times and add alternately with the buttermilk, red food coloring and vanilla to the shortening and sugar. Beat well. Add the soda which has been dissolved in the vinegar. Can be baked in 2 layers or cupcakes in a 350 degree oven for 40 minutes. Frost with white butter icing.
