ITALIAN SAUSAGE QUICHE 
1 deep dish pie shell
2 eggs
2 egg yolks
1 c. half and half
1 1/2 c. shredded Monterey Jack cheese
3/4 lb. Italian sausage
2 tbsp. chopped jalapeno peppers
1/2 tsp. salt
1/4 tsp. pepper

Preheat oven to 350 degrees. Beat eggs, yolks and cream together. Stir in cheese, sausage, chilies, salt and pepper. Pour into pie shell and bake 30-35 minutes. Sprinkle with paprika.
