SPEEDY SWISS STEAK 
2 tbsp. butter
2 1/2 lb. beef round steak, about 1 1/2 inches thick
2 tsp. salt
1/4 tsp. pepper
1 med. size onion, chopped (1/2 c.)
1 can (1 lb.) stewed tomatoes, broken up
1 tbsp. flour
1 tbsp. Worcestershire sauce
1 clove garlic, crushed

Heat open pressure cooker until hot, add butter and let sizzle, add steak and brown on both sides. Add salt and pepper. Add onions last few minutes to brown.

Combine stewed tomatoes, flour, Worcestershire and garlic, pour over steak.

Close cover securely; place pressure control on vent pipe turn heat on high until pressure rises and control starts to jiggle, about 3 to 5 minutes.

Reduce heat slowly to medium-low so control jiggles or rocks gently; cook 20 to 30 minutes.

Turn heat off and let pressure drop of its own accord, about 15 minutes. Remove control and carefully remove to warm platter and cut into serving sizes and spoon sauce over it. Serve with noodles. 8 servings.
