CARROT CAKE 
2 1/2 c. self-rising flour
2 c. sugar
2 tsp. cinnamon
1 1/2 c. Wesson oil
4 eggs
1 tsp. vanilla
3 c. grated carrots

Mix flour, sugar and cinnamon. Add oil, eggs and vanilla. Add carrots. Bake at 350 degrees for 45 to 50 minutes in tube pan, layer pan or sheet cake pan.

FROSTING:

1 box 10X sugar
1 stick butter
8 oz. cream cheese
2 tsp. vanilla
1 c. chopped pecans

Mix together frosting ingredients.
