CARROT POUND CAKE 
1 1/2 c. oil
3 c. self rising flour
1/8 tsp. salt
2 c. sugar
1 tsp. cinnamon
4 eggs
1 c. chopped nuts
2 c. grated carrots
1 c. coconut

Put oil in large mixing bowl. Sift together flour, salt, sugar, and cinnamon. Add alternately eggs and dry ingredients in to oil. Add nuts, carrots, and coconut. Pour into tube pan and bake 1 hour at 325 degrees.

CREAM CHEESE ICING:

1 (8 oz.) pkg. cream cheese, softened
1 stick butter, softened
1 box confectioners sugar
1 tsp. vanilla
1 c. chopped nuts

Mix together.
